Rosemary Hill is a family-run business situated on a beautiful organic and biodynamic working farm, just east of Pretoria. The farm is open to the public and boasts 33km of trails meandering through the farm, a coffee shop serving hearty homemade meals, a farm shop selling a variety of unique farm products, a stunning formal garden with over 3000 plants, an authentic wooden barn which plays host to our weekend weddings and many more. We also share the property with a unique private school that has boarding facilities. Head Chef

Position: Head Chef at Rosemary Hill, Pretoria East

Starting date: 1 March 2017 or ASAP thereafter

Salary: Negotiable

Hours: 50 hours per week, 5 days on, 2 days off

 

Job Overview

 We are looking for an experienced and qualified Head Chef to organize the kitchen’s activities. You will be the first in command in the facilities and will create and inspect dishes before they arrive at the customers ensuring high quality and contentment. Guest satisfaction in our restaurant revolves around freshness, high quality of the food, it’s appearance and the overall dining experience.

 

Responsibilities

  • Control and direct the food preparation process and any other relative activities
  • Liaising with guests to create private dinner menus and ensure that requests and dietary requirements are met
  • Approve and “polish” dishes before they reach the customer
  • Menu planning, stock control and ordering
  • Plan orders of equipment or ingredients according to identified shortages
  • Maintaining food costs within budget
  • Arrange for repairs when necessary
  • Remedy any problems or defects
  • Comply with nutrition and sanitation regulations and safety standards
  • Be fully in charge of hiring, managing and training kitchen staff
  • Oversee the work of subordinates
  • Estimate staff’s workload and compensations
  • Maintain records of payroll and attendance
  • Foster a climate of cooperation and respect between co-workers
  • Commitment to training the team and developing those with potential with a view to internal promotion
  • Working closely with the kitchen & restaurant teams, management and other departments to ensure a harmonious working atmosphere

 

Requirements

  • Proven experience as head chef
  • Exceptional proven ability of kitchen management
  • Ability in dividing responsibilities and monitoring progress
  • Up-to-date with culinary trends and optimized kitchen processes
  • Good understanding of useful computer programs (MS Office, restaurant management software, POS)
  • Credentials in health and safety training including food safety, storage and health standards,
  • Sound knowledge of Industrial Relations and procedures
  • Able to maintain 5 star standards
  • Strength in a la carte and banqueting
  • Creative with menus, presentation and garnish skills
  • Able to work shifts or work additional shifts and hours at short notice
  • Able to perform under pressure
  • Own transport
  • Versatile in providing different styles of cuisine
  • Good understanding of nutrition, food allergies restrictions and choices
  • Degree in Culinary science or related certificate (A minimum of 3 years working experience in a 4 or 5* environment, including the position as a junior sous chef)

Pastry Chef

Position: Pastry Chef at Rosemary Hill, Pretoria East

Job Overview

We are looking for an experienced Pastry Chef to prepare a variety of desserts, pastries and other sweet goods for our tea parties, weddings & farm shop. Your skill in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes.

The ideal candidate must be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving.

 

Responsibilities

  • Prepare a wide variety of goods such as teatime savoury & sweet treats, cakes, cookies, bread etc. following traditional and modern recipes
  • Create new and exciting desserts to renew our menus and engage the interest of customers
  • Check and ensure that all products are consistently prepared at the highest quality standard
  • Be able to estimate baking needs, requisition adequate supplies, manage inventory and keep records of products made and used
  • Maintaining food costs within budget
  • Check quality of material, condition of equipment and devices used for cooking
  • Equipment must be maintained according to proper health & sanitation standards
  • Guide, motivate & inspire pastry assistants and bakers to work more efficiently
  • Identify staffing needs and help recruit and train personnel
  • Forster a climate of cooperation and respect between co-workers
  • Supervise pastry assistants including planning, organizing, scheduling and directing work
  • Maintain a lean and orderly cooking station and adhere to health and safety standards
  • Comply with nutrition and sanitation regulations
  • Working closely with the kitchen & restaurant teams, management and other departments to ensure a harmonious working atmosphere

 

Requirements

  • Proven experience as Pastry Chef, baker or relevant role
  • Great attention to detail and creativity
  • Organizing and leadership skills
  • Ability in dividing responsibilities and monitoring progress
  • Willingness to replenish professional knowledge including staying up to date with culinary trends and optimizing kitchen processes
  • In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
  • Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
  • Good understanding of nutrition, food allergies restrictions and choices
  • Certificate in culinary arts, pastry-making, baking or relevant field
  • A minimum of 3 years working experience in a 4 or 5 star environment
  • Able to maintain 5 star standards
